A compound with the formula NaC6H11O7. It is the sodium salt of gluconic acid. Its E number is E576. Sodium gluconate is produced by fermentation of glucose and non-treatment of the resulting gluconic acid with sodium hydroxide. It is non-toxic, non-corrosive, highly water soluble and rapidly biodegradable (98% in 2 days).

In the food industry, sodium gluconate acts as a stabilizer, sequestrant and thickener when used as a food additive (E576). It is approved by CODEX (Codex Alimentarius Commission) for use in dairy products, processed fruits, vegetables, herbs and spices, cereals, processed meat, canned fish, etc. Sodium gluconate is most commonly used in the processing of bitter products such as olives, as it helps to reduce the sensation of bitterness.

In cosmetics, sodium gluconate is used as a stabilizer to prevent discoloration of products and the breakdown of fats (as they decompose, they give off an unpleasant odor due to the release of saturated acids). It is commonly used in cosmetic oils and butter type products. Also acts as a humectant and pH regulator. Sodium gluconate is used as a natural alternative to synthetic chelates (metal ion binders) such as EDTA, NTA, etc. It is commonly used in concentrations of 0.1-1.0%. Soluble in water. For external use only. Can be used in all types of products: creams, lotions, shampoos, conditioners, make-up or tanning products. Sodium gluconate is used as a chelating agent, forming complexes with metal ions which may affect the stability and appearance of cosmetic products. Gluconates are added to cleansers and shampoos to increase foaming by breaking down hard water ions. Gluconates are also used in oral and dental care products such as toothpaste, where it is used to sequester calcium and help prevent gingivitis.

In metalworking, sodium gluconate is used as a particularly effective scavenger of iron deposits (both iron oxides and iron sulfides and other salts). The compound itself is not aggressive and therefore does not corrode metals, but due to its highly effective chelating effect it quickly binds metal ions, thus gently cleaning the metal surface. It is stable both at high temperatures and in alkaline and highly concentrated alkaline solutions, forming stable chelates, making it more effective than EDTA, NTA and other similar chelates.

In construction industry, sodium gluconate is used as a water reducer and inhibitor in the construction industry. It is an effective inhibitor and a good plasticizer and water reducer for concrete, cement, mortar and gypsum. It can also be used as a stiffening agent for concrete.

In heating systems it is used as a water quality stabilizer as it is an excellent inhibitor of sedimentation, a water softener and an anti-corrosive additive to prevent the decomposition of metals in heating systems.

In medicine, it can maintain the acid-base balance in the human body and restore normal nerve function. It can be used to prevent and treat sodium deficiency in the body.

In animal husbandry, sodium gluconate can be used to improve the uptake of iron, calcium, magnesium, aluminum and other metals from feed.
