Sodium nitrite is an inorganic compound with the chemical formula NaNO2. It is a white to slightly yellowish crystalline powder which is highly soluble in water and hygroscopic. From an industrial point of view, it is the most important nitrite salt.
In the food industry, salt has historically been used to preserve meat. Meat products preserved with salt were usually brownish grey in color. The addition of sodium nitrite with salt turns the meat red, then pink, which is associated with cured meats such as ham, bacon, hot dogs and bologna. Between 2 and 14 parts per million (ppm) are needed to produce this color change. However, much higher quantities are required to prolong the time required for this color change. The unique flavor is also due to the addition of sodium nitrite. Sodium nitrite has been variably effective in controlling the growth of other spoilage or disease-causing micro-organisms. Although the mechanisms of inhibition by sodium nitrite are not well known, its effectiveness depends on several factors including residual nitrite levels, pH, salt concentration, reducing agents and iron content. Other food additives (e.g. lactate and sorbate) provide similar protection against bacteria, but do not give the desired pink colour. Sodium nitrite can also be effective in delaying the development of oxidative decay. Lipid peroxidation is considered to be the main cause of quality deterioration of meat products (putrefaction and off-flavors). Sodium nitrite acts as an antioxidant in a mechanism similar to that responsible for the coloring effect. Nitrite reacts with haem proteins and metal ions to neutralize free radicals with nitric oxide (one of its by-products). The neutralization of these free radicals breaks the lipid oxidation cycle that leads to putrefaction.
In pharmaceuticals, sodium nitrite is an effective treatment for cyanide poisoning. It is used in combination with sodium thiosulphate.
In energy industry, sodium nitrite is an effective corrosion inhibitor and is used as an additive in industrial solutions, as an aqueous solution in closed-cycle cooling systems and as a molten heat transfer agent.
In wastewater treatment plants, sodium nitrite is used to increase the nitrite content of bacteria. For example, bacteria grow significantly faster with nitrite ions, thus accelerating the rate of decomposition of nitrogenous materials and improving the quality of water treatment.
In aquariums, sodium nitrite is used to reduce carbonate levels. Increasing nitrate increases bacterial and algae growth, resulting in lower carbonate levels. In aquaculture, sodium nitrite is also used during the start-up of biofilters, when nitrogen-degrading bacterial growth processes are not established. Until sufficient nitrogen substrate is naturally supplied to the purification filters, and in order to stimulate the growth of nitrogen-oxidizing bacteria, additional sodium nitrite is added to the purified water in order to provide nutrients to the bacteria.
In metalworking, sodium nitrite is used to reinforce the surface of iron and to give hardness. In precious metal extraction, sodium nitrite is used as an oxidizing agent to gently transition precious metals from an ionic (liquid, soluble) to an atomic (solid, metallic) state. It is used in various metallurgical applications, phosphating and detinning.
