Sodium hydrocarbonate otherwise known as sodium bicarbonate, baking soda, baking soda, baking soda. The chemical formula of the compound is NaHCO3. Sodium bicarbonate is a white odorless crystalline powder. It has a slightly salty, alkaline taste reminiscent of washing soda (sodium carbonate).

In confectionery. One of the main uses of sodium bicarbonate is in the production of baking powder. Sodium bicarbonate mixed with dough reacts with the acid in the dough to form carbon dioxide, which raises the dough. At the same time, the acidity of the dough is reduced by neutralizing the acid. If there is no acid in the dough, the acid is caused by the thermal decomposition of the sodium bicarbonate, which produces carbon dioxide, which raises the dough. The baking powder on sale contains up to 30 % sodium bicarbonate, the rest being various acidic ingredients. In some cases, baking soda is used to boil vegetables so that they do not lose their beautiful green color. It is also used in the preparation of beans, peas and chickpeas to soften the outer skin.

In livestock farming, sodium bicarbonate is used as a pH regulator in feed and as an anti-acidic or acidosis preventive agent.

Pest control. Sodium bicarbonate can be used to control cockroaches. When cockroaches consume it, their internal organs begin to explode due to the gas build-up. Sodium bicarbonate can be an effective way to control fungal growth and is registered as a biopesticide by the United States Environmental Protection Agency.

In water treatment If you need to increase the alkalinity of a body of water (aquarium, swimming pool, garden pond, etc.) you can use sodium bicarbonate. It is not recommended if the alkalinity is already high.

In pyrotechnics. Sodium bicarbonate is one of the main ingredients in "black snake" fireworks. This effect is caused by thermal decomposition, which produces carbon dioxide gas that raises the ash of the other main product, sucrose, to produce a long snake-shaped streak of ash.

In disinfection. It has weak disinfectant properties and can be an effective fungicide against certain organisms. Because baking soda absorbs the odor emitted by mould, it is used as a reliable method for booksellers to prevent books from giving off a bad smell.

In fire extinguishers. Sodium bicarbonate can be used to extinguish small grease or electrical fires. Sprayed sodium bicarbonate releases carbon dioxide when heated, which removes oxygen and suppresses the fire. However, it should not be used to extinguish fires in deep fat fryers, as the sudden release of the gas may cause the hot fat to sputter. Sodium bicarbonate is used in BC dry chemical extinguishers as an alternative to the more corrosive diammonium phosphate in ABC extinguishers.

In acid and base neutralization. Sodium bicarbonate is an amphoteric compound and reacts with acids and bases. It reacts violently with acids, releasing CO2 gas as a reaction product. It is commonly used to neutralize unwanted acid solutions or acid spills in chemical laboratories.

In medicine. Sodium bicarbonate mixed with water can be used as an antacid to treat acid reflux and heartburn. It reacts with stomach acid to form salt, water and carbon dioxide. Intravenous sodium bicarbonate is an aqueous solution that is sometimes used to treat acidosis or when there is insufficient sodium or bicarbonate ions in the blood. In respiratory acetylosis, the infusion of bicarbonate ion shifts the carbonic acid/bicarbonate plasma buffer to the left, thereby raising the pH. Bicarbonate infusion is only used when the blood pH is considerably low (<7.1-7.0). May be used to reduce allergic reactions to plants such as poison ivy, Pacific poison oak or sumac. Sodium bicarbonate may also be useful for the removal of scabs from the skin. It can be added to local anaesthetics to speed up their effect and make their injection less painful. It is also a component of Moffett's solution used in nasal surgery. Inhibits the spread of white phosphorus in a wound caused by an incendiary bullet. Reduces the adverse effects of tear gas.

In personal hygiene. Used in toothpastes to improve the whitening effect of teeth. Sodium bicarbonate is also used as an ingredient in mouthwashes. Due to its abrasive properties, it acts as a mechanical cleanser of the teeth and gums, neutralizes the formation of acid in the mouth, and also acts as an antiseptic, helping to prevent infections. Sodium bicarbonate can be used in combination with other ingredients to make a dry or wet deodorant. Together with table salt, it can be used as a buffer solution for nasal irrigation.

In cleaning products. Used to remove paint and corrosion products. Particularly suitable for cleaning aluminum plates, as other types of abrasives may distort them. When mixed with a minimum amount of cold water, the resulting paste can be used for effective rust removal. The use of warm water is not recommended as it may cause further corrosion of the metal. Mixing with warm water and the use of aluminum foil can remove the silver oxide film formed on silver jewellery. It is used as a water softener in washing machines and removes unpleasant odors from laundry.
