Maltodextrin is a polysaccharide used as a food ingredient. It is produced from vegetable starch by partial hydrolysis and is usually a white hygroscopic spray-dried powder. Maltodextrin is easily digestible, absorbed as quickly as glucose and can be moderately sweet or almost tasteless (depending on the degree of polymerisation). It can be an ingredient in a variety of processed foods. It is used as a flavouring agent, a tackifier, a humectant, a food additive, a nutritive sweetener, a solvent, a stabiliser or thickener, a surfactant and a texturizing agent in foodstuffs.

In food industry maltodextrin is used, as a white powder which is relatively tasteless and soluble in water. It is an additive in a wide range of foods because it improves their texture, taste and shelf-life. In edible products, this powder can help:

  • thicken foods or liquids to bind ingredients together
  • improve texture or taste
  • help preserve foods and extend their shelf life
  • replacing sugar or fat in low-calorie, processed foods

It is a highly digestible carbohydrate and can provide energy quickly. For this reason, manufacturers add this powder to many sports drinks and snacks. Many people eat maltodextrin every day. It is inexpensive and easy to make, making it useful for thickening products such as instant puddings and gelatines, sauces and salad dressings. It can also be combined with artificial sweeteners to sweeten products such as canned fruit, desserts and powdered drinks. Foods often containing maltodextrin:

Maltodextrin is used to improve the texture and mouthfeel of foods and beverages such as potato chips and 'light' peanut butter to reduce fat content. Maltodextrin can be used as a food supplement in powder form, in gel packs or in energy drinks. It is also used as a lactose substitute. It is also used as a filler in sugar substitutes and other products. Maltodextrin has a glycaemic index ranging from 85 to 119, which is higher than sugar (sucrose).

In horticulture, maltodextrin is used as a horticultural insecticide in the field and in greenhouses. It has no biochemical effect. Its effectiveness is based on the fact that when a dilute solution is sprayed on pest insects, it dries, clogs the spiracles of the insects and causes their death by suffocation. EU active substance for use as an insecticide on non-edible crops, soft fruits, sugar cane fruits, bush fruits, brassicas and apical fruits.

In animal husbandry, maltodextrin can also be used in animal feed and health care products as an easily digestible source of energy, intermediate between starch and sugar. In balancing animal diets, there are recommended intakes:

  • Calves: 3-7% of the diet.
  • Cattle: 2-4% of the ration.
  • Piglets: 3-7 % of the diet
  • Pigs: 2-4 % of the ration
  • Horses: 2-4 % of the ration
  • Poultry: 1 - 2 % of the diet
  • Pet food / mink: 3-7 % of ration

Maltodextrin is used in animal feed, special purpose feeds (premixes and snacks, veterinary products, milk replacers) for its improved textural and palatability properties. The functional properties take into account energy requirements, carrier properties, thickening and binding properties.

In sports nutrition, for bodybuilders and other athletes wishing to gain weight, maltodextrin can provide a quick source of calories during or after training. Since maltodextrin does not use as much water for digestion as some carbohydrates, it is a good way to get quick calories without losing a lot of fluid. Some studies also suggest that maltodextrin supplementation may help maintain anaerobic power during exercise.

In cosmetics, maltodextrin has many functions, including as an absorbent, binder, stabiliser, film-former and skin softener. It is recognised as safe for use in skin care products. Typical use is 1-2 %. The main INCI functions:

  • Absorbent: Absorbs dissolved or fine water (or oil).
  • Binding agent: Allows the combination of different cosmetic ingredients
  • Emulsion stabiliser: Promotes the emulsification process and improves the stability and shelf life of the emulsion.
  • Film formation: creates a continuous film on the skin, hair or nails
  • Hair conditioning: makes hair easy to comb, soft and shiny and/or gives volume, lightness and shine
  • Skin care: maintains good skin condition

Maltodextrin: a plant-derived sugar used as a moisturising ingredient in cosmetics and skin care products, and also used as an ingredient in baby products. Maltodextrin can be used as an anti-ageing ingredient as well as an irritant. Research has shown that although maltodextrin itself is not an anti-ageing compound, it has enhanced the anti-ageing effect of weak acids and reduced skin irritation sometimes caused by other acids. It was also found to reduce irritation associated with the use of weak carboxylic acids and to increase the anti-ageing efficacy of hydroxy acids.

In medicine. it is used as a binding agent for vitamins and biologically active substances in pharmacology. Maltodextrins act as protective colloids in emulsions and as polymerisation agents in emulsions. Maltodextrins can also be used as a carrier for granulation of fermentation products.
