A compound with the formula NaC6H11O7. It is the sodium salt of gluconic acid. Its E number is E576. Sodium gluconate is produced by fermentation of glucose and non-treatment of the resulting gluconic acid with sodium hydroxide. It is non-toxic, non-corrosive, highly water soluble and rapidly biodegradable (98% in 2 days).

In the food industry, sodium gluconate acts as a stabilizer, sequestrant and thickener when used as a food additive (E576). Compared to the intense taste of standard acids and their salts, such as citric, malic and lactic acid, gluconic acid has a slightly sweet, mildly acidic taste and a persistent tongue action. Sodium gluconate reduces the bitterness of high-intensity sweeteners (HIS) such as stevia, minerals and caffeine. It masks the side notes or aftertastes of vegetable proteins and artificial high-intensity sweeteners such as saccharin and aspartame, making them suitable for widespread use in low- to medium-calorie non-alcoholic, sports or energy drinks. The unique properties of sodium gluconate make it an excellent choice for healthier and better tasting drinks. Sodium gluconate is also approved by FEMA as a flavor ingredient with modifying properties and can be labelled as a natural flavoring if the conditions for declaration are met. Sodium gluconate has FEMA No 4934. Sodium gluconate also acts as a stabilizer in meat products, in particular in emulsion-type sausages such as frankfurters. It increases the ionic strength and causes the muscle proteins to swell and unfold. This increases the water-binding capacity, which has a positive effect on the firmness and cutting properties of the meat.

In cosmetics, sodium gluconate is used as a product stabilizer to prevent discoloration and the degradation of fats (which, when degraded, give off an unpleasant odor due to the release of saturated acids). It is commonly used in cosmetic oils and butter type products. Also acts as a humectant and pH regulator. Sodium gluconate is used as a natural alternative to synthetic chelates (metal ion binders) such as EDTA, NTA, etc. It is commonly used in concentrations of 0.1-1.0%. Soluble in water. For external use only. Can be used in all types of products: creams, lotions, shampoos, conditioners, make-up or tanning products. Sodium gluconate is used as a chelating agent, forming complexes with metal ions which may affect the stability and appearance of cosmetic products. Gluconates are added to cleansers and shampoos to increase foaming by breaking down hard water ions. Gluconates are also used in oral and dental care products such as toothpaste, where it is used to sequester calcium and help prevent gingivitis. Main INCI functions:

  • Chelate: Reacts and forms complexes with metal ions which can affect the stability and/or appearance of cosmetic products.
  • Skin conditioning: maintains good skin condition

In metalworking, sodium gluconate is used as a particularly effective remover of iron deposits (both iron oxides and iron sulfides, etc. salts). The compound itself is not aggressive and therefore does not corrode metals, but due to its highly effective chelating effect it quickly binds metal ions, thus gently cleaning the metal surface. It is stable both at high temperatures and in alkaline and highly concentrated alkaline solutions, forming stable chelates, making it more effective than EDTA, NTA and other similar chelates.

In construction, sodium gluconate is used as a water reducer and inhibitor in the construction industry. It is an effective inhibitor and a good plasticizer and water reducer for concrete, cement, mortar and gypsum. It can also be used as a stiffening agent for concrete. Sodium gluconate can significantly delay the onset of curing and the end of setting of concrete, which is an important advantage in difficult conditions such as long transport times, hot summer days or tropical weather. In addition to its widespread use as a very effective bond retarder, it also acts as a water reducer and provides better workability of concrete mixes.

In heating systems, it is used as a water quality stabilizer as it is an excellent inhibitor of sedimentation, a water softener and an anti-corrosive additive to prevent metal decomposition in the heating system.

In medicine, it can maintain the acid-base balance in the human body and restore normal nerve function. It can be used to prevent and treat sodium deficiency in the body.

In animal husbandry, sodium gluconate can be used to improve the uptake of iron, calcium, magnesium, aluminum and other metals from feed. It can also maintain the acid-base balance in the animal's body and restore normal nerve function. It can be used to prevent and treat sodium deficiency in the body. It can also be used as an additive to improve the digestibility of feed.
